The grapes are harvested by hand, selected, destemmed then immediately chilled to a temperature of 6°C. They are then brought to the press where they are left for 12 hours in cold pellicular maceration. The must is left to decant for a further 48 hours at 4°C, after which it is allowed to ferment at a temperature of 16-17°C. Following stabilization, bottling occurs about 5 months after the harvest.
Brilliant yellow with light golden reflexes. Aromas of citruses, apple, pear and exotic fruits. In the lightly herbaceous, mineral and slightly salty character one can perceive the helping hand of the Grechetto. The taste is harmonic and fresh and its acidity perfectly balanced with fullness and roundness of taste. The minerality is remarkable and typical of the sandy Mediterranean terrain that is home of this wine. Perfect with fish and sea food.
