Winemaking

The Sangiovese grapes are hand picked and selected. After destemming, the must ferments in temperature controlled cement vats, starting at 18°C then gradually rising in controlled steps to about 28°C towards the end of the fermentation process. During the maceration which lasts about 20 days, pump overs are carried out daily and towards the end of the period also a short “delestage”. Malolactic fermentation occurs in the cement vats, after which a portion of the wine, approximately 20%, is transferred into second fill tonneaux of French oak, where it ages for about 6 months and the rest is left to age for about 1 year in vitrified cements vats.

Tasting notes

Ruby red in color. On the nose the perfume is of fresh fruit, intense and expressive, reminiscent of mature, wild berries and a shade of vanilla. Fruity and appropriately tannic. Rosso Ribelle is a young, versatile and pleasurable expression of a Sangiovese from Maremma.
