Winemaking
The Sangiovese grapes are handpicked in August. After a soft pressing the must goes through an initial fermentation. The addition of the pied de cuve will initiate a second fermentation which will last for about 20 days during which time the wine mass will be stirred once or twice a day. Once this second fermentation is finished, in order to obtain the highest possible quality, the wine is left on its fine lees for approximately 6 months, with a periodic re-suspension of the wine sediments in order to make it richer and render it more complex and full bodied. During this phase the temperature is kept between 18° and 15° C. Once filtered the temperature is brought down to -4 C provoking the precipitation of the tartaric acid. It is then filtered and bottled at constant temperature and hyperbaric environment.
Tasting notes
Lovely bright and light pink with a persistent bead of pin point bubbles. The bouquet is delicate and fragrant, releasing nuances of wild berries, citrus, and rose petals. The palate, stylish and well balanced, gradually revealing a refreshing acidity, and a finish marked by redcurrant and strawberries. Ideal as an aperitif and in perfect harmony with cold meats and starters.
