The Sangiovese grapes are hand picked and selected. After destemming, the must ferments in temperature controlled cement vats, starting at 18°C then gradually rising in controlled steps to about 28°C towards the end of the fermentation process. During the maceration which lasts about 20 days, pump overs are carried out daily and towards the end of the period also a short “delestage”. Malolactic fermentation occurs in the cement vats, after which the wine is transferred into second fill tonneaux of French oak where it ages for about 6 months.
Ruby red in colour, with brilliant reflexes of purple; on the nose the scent of fresh fruit, intense and expressive, reminiscente on of the mature red fruits, cherry and wild berries. The dense and soft tannins add depth and persistence. Reviresco is an inviting wine that can be served ad an aperitif, with antipasti, first courses of pasta and red meat.
